Quick, fresh, tasty..look at the fiber and protein! All the ingredients are staples in my fridge.

Recipe Ingredients for Breakfast Salad

1 cups mixed greens
1 oz white beans
1/4 cup brown rice
1 tsp gorgonzola cheese
1/2 tsp canola oil

Recipe Directions for Breakfast Salad

  1. 1 cup washed and dried mixed greens

  2. 1/2 cup canned white beans with some liquid (the recipe shows 1 oz of raw beans to match the profile of the cooked, canned)

  3. 1/4 cup cooked brown rice

  4. 2 tbl Trader Joe's Champaigne Pear Vinaigrette (the gorgonzola and canola oil pretty well match the nutritional profile of TJ's tasty dressing. I find it a bit sweet for a dinner salad but goes great for breakfast)

  5. Toss all together in a cereal bowl
