Recipe Ingredients for Breakfast Risotto

1/2 cup arborio rice
1 cup water
4 oz canned pineapple in juice
7 oz lite coconut milk
1/8 cup craisins
1/8 cup sliced almonds
1/2 medium banana

Recipe Directions for Breakfast Risotto

  1. Put saucepan on medium heat. Add water a bit at a time, stirring constantly, until all is absorbed. (Standard risotto method.)

  2. When water is all absorbed, add pineapple juice. When juice is absorbed, add coconut milk.

  3. Before coconut milk is entirely absorbed, add remaining ingredients. When risotto is thick, creamy, and tender, eat it!
