Recipe Ingredients for Breakfast Quiche

10 oz. frozen chopped spinach
3/4 cup liquid egg substitute
3/4 cup reduced-fat mozzarella cheese
1/4 cup diced onions

Recipe Directions for Breakfast Quiche

  1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.

  2. Spray a muffin pan with cooking spray.

  3. Combine the egg substitue, cheese, onions, and spinach - mix well. Add a few drops of hot pepper sauce if you like. Divide into the muffin cups. Bake at 350 for 20 minutes.
