Recipe Ingredients for Breakfast Quiche

3 tbsp Shedd's Spread Country Crock Plus Calcium and Vitamins Soft
1 cup White Whole Wheat Flour
6 large Egg, White
2 large Egg, Whole
8 spears (1/2" base) Asparagus
4 cups Baby Spinach
1 cup Nonfat Milk
1/8 tbsp Extra Virgin Olive Oil
1/4 cup, shredded Monterey Cheese
2 oz Fat Free Feta Crumbled
4 medium (4-1/8" long) Onions, Spring Or Scallions
4 1/2 slice Turkey bacon

Recipe Directions for Breakfast Quiche

  1. Start by making the crust. First, in a large mixing bowl or a food processor, combine 2 teaspoons of sugar and 1 cup of flour. Add 3 tablespoons of chilled, reduced calorie margarine and process until mixture looks crumbly, like coarse meal. If you don?t have a food processor, just use your fingers. Then start to mix in cold water, one tablespoon at a time, and mix well forming a dough. Using a rolling pin, flatten dough in a circle a bit larger than a9-inch pie pan. Press dough into the bottom and up the sides of the pie pan.

  2. Preheat the oven to 375 degrees F. Line a 9-inch pie plate with pie dough and stick in freezer while you prepare the other quiche ingredients.

  3. In a large skillet, heat olive oil over medium heat. Add the asparagus spears, and spinach. Cook until asparagus spears are slightly tender and spinach is wilted. Transfer spinach to a colander. Press firmly with the back of a spoon to squeeze out as much liquid as possible. Set aside.

  4. In a large bowl, whisk together eggs and milk. Stir in the feta and mozzarella cheese. Season with salt and pepper, to taste.

  5. Remove pie crust from the freezer. Place asparagus pieces, spinach, and green onions on the bottom of the crust. Pour the egg and cheese mixture over the vegetables and into the crust.

  6. Bake the quiche for 45 minutes or until quiche is set and slightly golden brown. Let quiche stand for 15 minutes before serving.
