Modified version of Paula Deen's Hash Browns

Recipe Ingredients for Breakfast Potatoes

6 red potatoes
1 tablespoon grapeseed oil
1 medium onion
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon curry powder
2 teaspoons dried parsley

Recipe Directions for Breakfast Potatoes

  1. In a medium saucepan, add red potatoes and water to cover.

  2. Simmer until cooked through, drain and cool in refrigerator.

  3. In a large skillet, add grapeseed oil.

  4. Add onions and cook over medium heat until caramelized, about 10 to 15 minutes.

  5. Thinly slice the potatoes and then crossways into short-french-fry-like pieces.

  6. Sprinkle potatoes with seasoning.

  7. Add potatoes to reheat and brown, turning only once with a spatula to prevent breaking up the potatoes.
