Healthy, hearty vegetarian breakfast potatoes. (The vegan version minus the cheese is pretty good too.)

Recipe Ingredients for Breakfast potatoes

3 small potatoes
1 carrot
1 stalk celery
1/4 cup onion
1/4 cup leek
1 small tomato
1/4 cup bell pepper
1/4 tsp salt or sea salt
1 tbsp herbs d' provence
1 tbsp rosemary
3 tbsp olive oil
3 oz mozzarella

Recipe Directions for Breakfast potatoes

  1. Heat oil in large skillet over medium heat.

  2. Add potatoes, carrots, celery, onion, salt and herbs, and brown, stirring often so it doesn't burn to the pan.

  3. Add remaining veggies and stir for a few minutes longer.

  4. Add a 1/4 cup water or broth, stir, and cover.

  5. Let simmer for another 5 minutes.

  6. If there's still a lot of liquid, remove lid and simmer until liquid is gone.

  7. remove from heat and stir in cheese.
