Recipe Ingredients for Breakfast Pepper Pizza

229 grams Peppers, Sweet, Red
104 grams Ham, Honey
100 grams Onions
205 grams Mushrooms
50 grams Spinach
30 grams Cheese Finely Shredded Tex-Mex Blend
0.27 g Original Cooking Spray
3 large Egg, Whole

Recipe Directions for Breakfast Pepper Pizza

  1. 229g Red or Green Peppers

  2. 104g Honey baked ham (Nugget)

  3. 100g white onion

  4. 205g mushrooms (white button)

  5. 60g fresh spinach

  6. 30g tex mex shredded cheese

  7. 3 whole eggs omega brand

  8. Chop all ham and veggies to half inch cubes/pieces, except for spinach. Stir fry all veggies in cast pan using Pam spray oil, till soft and tender. Do not overcook. Sprinkle pepper medley on the stir fry and mix in. While veggies are cooking, prepare three eggs in a bowl, seasoning with a teaspoon of Pepper medley, 1 tb of dried or fresh basil, a shot of smoked tabasco, and whip up till well mixed.

  9. add a little sprinkle of smoked paprika to the stir fry, stir, put lid back on to steam for 1 min and pour ingredients into a separate bowl.

  10. Re spray pan and take egg mixture, stirred and pour into the pan making sure the pan bottom is covered with layer of egg and cover for 1 minute. When eggs have started to cook on top, pour veggies evenly over eggs, layer the spinach over the eggs, sprinkle the cheese over the spinach and cover for about 1-2 minutes till the cheese is melted into the spinach. Carefully slice into quarters and lift out to serve. Add a touch of salsa on the side for added kick.
