tomato and tarragon omelette. Fresh tasting, but satisfying. Serve with a salad for a light lunch.

Recipe Ingredients for breakfast omlette

184 g tomatoes, cherry
1 1/2 g spray oil
368 g egg
20 g fresh tarragon

Recipe Directions for breakfast omlette

  1. Spray frying pan with spray oil.

  2. Slice tomatoes in half, toss in salt and pepper

  3. Place tomatoes, cut side down, in the heated pan

  4. Beat eggs, add chopped fresh tarragoon

  5. Pour over eggs.

  6. Cook, covered on a very low heat until just cooked through

  7. I made a large flat omelette, if you make a smaller fatter omelette, you may need to transfer it under a hot grill, or inot the oven to finish cooking on top.
