Recipe Ingredients for Breakfast Omelet SBD

6 large Egg, Whole
1 stalk, small (5" long) Broccoli
5 3/5 oz Ham, Sliced, Extra Lean
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 oz Sharp Cheddar 2% Milk Reduced Fat

Recipe Directions for Breakfast Omelet SBD

  1. Blanch the broccoli for 2-3 minutes in lightly salted water.

  2. Cut the ham into small cubes and fry for a few minutes in 1 T oil tops.

  3. Chop the spring onion and add to ham in pan.

  4. Let the broccoli drain well.

  5. Whisk eggs in bowl with little salt and pepper. Whisk until foamy.

  6. Reduce heat to low.

  7. Even the ham and spring onions in pan and pour eggs over.

  8. Add broccoli on top and cover.

  9. Cook for about 5 minutes. Flip the omelet (you might have to do it in halfs or quarters since the broccoli makes it harder to flip).

  10. Sprinkle cheese on top and cover again. Cook for another 3-5 minutes, or until cheese is melted.
