This is a filling breakfast omelet that is easy to make and very tasty. You can add whatever you have on hand and spice it up with whatever you like. I'm trying to cut down on sodium so I left that out.

Recipe Ingredients for Breakfast Omelet

1/2 cup Eggbeaters
2 tbsp mushrooms
1/4 cup onion, diced
1/2 cup broccoli, diced

Recipe Directions for Breakfast Omelet

Dice mushrooms, onions and broccoli and saute in skillet for about 4 minutes. Remove from skillet and spray skillet with Pam and add the Eggbeaters. (I like to use my little handheld mixer and beat the eggs until frothy to make a light and fluffy omelet.) I also add a little Mrs. Dash - Garlic & Herb spices, but this site doesn't have it listed? Let the eggs set, add the vegetables and fold omelet over and cook for about another 3 minutes.
