Recipe Ingredients for Breakfast Muffins

2 eggs
1/3 cup oil
1/2 cup brown sugar
1 cup zucchini
1 cup carrots
1 cup banana
1 cup raisins
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla

Recipe Directions for Breakfast Muffins

  1. Grate zucchini and carrots and mash banana

  2. you can use raisins or any other dried fruit or chopped apple

  3. Mix first 3 ingredients together. Add next 4 ingredients and mix together. Add rest of ingredients

  4. Makes 12 muffins. Bake 20 minutes at 400.
