Bran muffins with carrots and pumpkin

Recipe Ingredients for Breakfast muffins

3/4 cup wheat flour
4 oz oat bran (3/4 cup)
1/4 cup brown sugar (Splenda)
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1 medium banana (mashed)
1/2 cup nonfat yogurt
2 egg whites
1/2 tsp vanilla
2 tablespoons vegetable oil
1/2 cup carrot (grated)
1/4 cup pumpkin

Recipe Directions for Breakfast muffins

  1. spray muffin pan with spray oil (Pam)

  2. Use two bowls - one for dry and one for wet ingredients

  3. mix the first 6 ingredients together in the "dry" bowl

  4. mix the rest in the "wet" bowl

  5. Combine the two mixtures and stir/fold about 10 times (don't overwork the batter)

  6. fill muffin tins (use a small ice cream scoop)

  7. bake at 400 for 15-20 minutes
