Yummy, all-natural, nutrient-packed muffins. Perfect for breakfast.

Recipe Ingredients for Breakfast muffin

1 1/4 cups whole-wheat flour
1/4 cup all-purpose flour
1/4 cup of honey
2 bananas
1 egg
1/2 cup apple sauce
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
3/4 cup blueberries

Recipe Directions for Breakfast muffin

  1. Preheat oven to 350 degrees.

  2. In a large bowl, combine the dry ingredients (including the optional chopped dried fruits and nuts).

  3. In a separate bowl, mix together the wet ingredients.

  4. Add this mixture to the bowl with the dry ingredients, and stir until just blended. Spoon batter into muffin tin sprayed with nonstick spray.

  5. Bake for about 50 minutes, or until a knife inserted in the middle comes out clean. Allow to cool.
