plain wholemeal muffin suitable for breakfast

Recipe Ingredients for Breakfast Muffin (plain)

225 grams wholemeal flour
2 tsp baking powder
100 grams caster sugar
1 medium egg
125 ml low-fat yoghurt
125 ml semi-skimmed milk
75 ml vegetable oil

Recipe Directions for Breakfast Muffin (plain)

  1. Preheat oven to 180 degrees Celcius

  2. Melt butter and leave to cool

  3. Put 8 large paper cases into a muffin tray

  4. Mix flour, baking powder, caster sugar and set aside

  5. Mix egg, yoghurt, milk and butter

  6. Poor the wet ingredients into the dry ingredients and mix, stop as soon as the ingredients have mixed. It is essential not to overmix!

  7. Fill cases with 1.5-2 tablespoons of mixture each

  8. Bake in oven for 30 minutes and leave to cool on a rack

  9. To add flavour ingredients mix wet products through wet mixture and dry through dry before merging
