Recipe Ingredients for Breakfast miso

1 teaspoon Wakame
1 tablespoon Miso
1 cup Spring Water
1/2 Scallion, sliced
2 tablespoons Carrots, chopped fine
1 cup Collard Greens, sliced
2 tablespoons daikon radish, sliced into matchsticks
2 tablespoons Delicata Squash, chopped fine
1 ounce tofu
1/5 cup Rice, Brown, Medium-grain, (1/2 cup cooked)

Recipe Directions for Breakfast miso

  1. Soak wakame in a small amount of water until soft. Pour out water and chop wakame. Set aside.

  2. Simmer (don't boil) water. Put miso in a spice mortar and use pestle to blend with 1 tablespoon of water. Set aside.

  3. Add chopped carrot and squash to simmering water to sweeten it. After a couple of minutes, add tofu, wakame and sliced scallions and collard greens. Add 1/2 cup of cooked brown rice per serving. Simmer until carrots have softened.

  4. Pour in miso and let cook through for a few minutes, but do not let it boil.

  5. Serve as a soup. or strain off liquid to drink separately.
