Can make ahead for quick microwavable breakfast on your way out. Low carb, high protein!

Recipe Ingredients for Breakfast Mini-Quiche

2 servings turkey bacon
2 cups Egg Beaters
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/2 cup cheddar cheese, shredded

Recipe Directions for Breakfast Mini-Quiche

  1. Pour egg beaters into 16 mini cups in mini cupcake pan - evenly distribute

  2. Chop up the 4 pieces of turkey bacon after cooking in a pan

  3. Evenly distribute the turkey bacon, onions, green pepper and top with the cheese

  4. Bake at 375 until cheese is golden brown.

  5. I think adding flour will make them a little more fluffy. Mine sort of shrunk after I took them out of the oven. They still taste awesome though!
