A quick, filling and tasty breakfast. I use Trader Joe's Lite Mexican Blend Cheese and Trader Joes Double Roasted Salsa which are both lower in fat, calories and sodium than the database foods used here.

Recipe Ingredients for Breakfast Mexi-Melt

1 slice whole wheat bread
2 tablespoons of fat free refried beans
2 tablespoons of salsa
1/8 cup shredded cheese

Recipe Directions for Breakfast Mexi-Melt

  1. Toast the slice of wheat bread

  2. Top the toast with the refried beans, the salsa and the cheese

  3. Put the toast with toppings into the microwave on re-heat for about 45 seconds or until the cheese melts

  4. Serve hot
