Economical breakfast that feeds four.

Recipe Ingredients for Breakfast hash

2 tablespoons olive oil
14 oz red potatoes
4 oz deli ham
1 tablespoon shallots
1 tablespoon parsley
1 teaspoon thyme
4 large eggs
2 tablespoons half and half
1/4 cup dry white wine
1/4 cup shredded sharp cheddar cheese

Recipe Directions for Breakfast hash

Dice potatoes and microwave for 3.5 minutes. Chop ham and saute in olive oil with shallot. Add microwaved potatoes. Cook until ham is crispy and potatoes have good color. Deglaze pan with wine and cook a few minutes to cook alcohol out. Set aside. Scramble eggs with parsley and thyme in a little olive oil. Add potato mixture back to scrambled eggs. Sprinkle with cheese and let it melt.
