Recipe Ingredients for Breakfast Fruit Loaf

3/4 cup All-Bran cereal
1 1/3 cups skim milk
1 1/2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3/4 cup raisins
2/3 cup dried apricots, chopped
1/4 cup pitted prunes, chopped
1/3 cup brown sugar
4 tbsp honey, floral

Recipe Directions for Breakfast Fruit Loaf

  1. Put bran cereal in a bowl, pour the milk over and soak for 30 minutes.

  2. Preheat oven to 350degreesF.

  3. Sift the flour, salt, baking soda, & baking powder into a bowl. Stir in the bran cereal mixture. Stir in the dried fruit, sugar, & honey. Mix well.

  4. Spoon mixture onto a non-stick 2lb loaf pan. Bake for 1-1 1/4 hours or until loaf is baked through.

  5. Allow the loaf to cool a little in the pan before turning it out onto a wire rack to cool.
