Recipe Ingredients for Breakfast Frittata

1 1tsp Olive Oil
1 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
0.5 cup, chopped Peppers, Sweet, Red
0.5 cup, pieces or slices Mushrooms
1/4 tsp Red Chili Pepper
4 large Egg, Whole
1/4 tsp Sea Salt
1 dash Pepper, Black
1 serving Hot Chili Sauce
1/4 tsp Oregano
1/4 tsp Cumin
0.5 cup, chopped Onions

Recipe Directions for Breakfast Frittata

  1. Dice the potato, and blanch the pieces in boiling water for 5 minutes. Drain well.

  2. Heat olive oil in cast iron pan. Add chopped onions, cook for about 1 minute, then add potatoes. Stir frequently to prevent sticking, or add a little water to the pan if necessary.

  3. After about 5-6 minutes, add diced red pepper and mushrooms, and other dry spices. Continue to cook until all vegetables are soft, about 10 minutes.

  4. Meanwhile, beat the eggs with the hot sauce.

  5. When the veggies are cooked, pour the beaten eggs mixture over them, and stir to incorporate. Keep the heat on medium-low. Cook for about 3 minutes, until the eggs are set around the edges. Take the pan off the stove and place under a broiler until the top of the frittata sets. Serve with sliced fresh tomato, or top with a sprinkle of parmesan cheese.
