Recipe Ingredients for breakfast frittata

3 eggs
3 egg whites
1/2 cup cottage cheese, low fat
3 oz ham, deli sliced
1 cup broccoli, cut
1 tomato, chopped
1 cup mushrooms, sliced
1 green bell pepper, diced
1 cup leeks, sliced
2 tbsp garlic, minced
1/4 tsp olive oil

Recipe Directions for breakfast frittata

  1. Saute vegetables. Add ham and mix.

  2. In blender mix cheese and eggs.

  3. Add egg/cheese mix to sauteed vegetables and cook until set.

  4. Divide into 4 portions and freeze until needed. Reheat in microwave for 2 minutes on high.
