Basic frittata made with 1 cup veggies and fat free cheese.

Recipe Ingredients for Breakfast frittata

2 T olive oil
2 eggs
2 egg whites
1/4 c onions, chopped
1/4 c mushrooms, chopped
1/4 c spinach, chopped
1/4 c zucchini, chopped
1/4 c fat free cheese

Recipe Directions for Breakfast frittata

  1. Preheat oven to 350.

  2. Saute veggies in 1 T. olive oil, remove from heat and cool.

  3. Beat eggs & whites, mix cooled veggies in.

  4. Cook eggs in remaining olive oil.

  5. Add cheese when eggs set slightly & bake in oven until done, about 8 minutes.
