Great vegetable, ham and cheese frittata

Recipe Ingredients for Breakfast frittata

6 eggs
1/3 cup 1% milk
1 yellow squash, diced
1/2 onion, diced
1 yellow bell pepper, diced
2 cups spinach
4 oz deli ham, diced
4 oz cheddar cheese, cubed
1 tbs olive oil
1 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp sea salt

Recipe Directions for Breakfast frittata

Saute in a large pan the squash, onion, and bell pepper in the olive oil for 5 minutes. When onions are translucent add the spinach and let wilt. In a separate bowl whisk together the eggs, milk, salt, pepper and cayenne pepper. Spray a 8x8 baking pan with cooking spray, next layer sauted vegetable mixture with the ham and cheese in bottom of pan. Pour egg mixture over layered ingrediants. Bake in a 325 degree oven for an hour. Cut into 12 pieces and serve.
