Easy and delicious breakfast or lunch with a green salad.

Recipe Ingredients for Breakfast Fritatta

2 slices grain bread
1/2 tbsp margarine
2 eggs
1/2 cup fat-free cottage cheese
2 roma tomatoes
2 tbsp onion, chopped
1/2 cup fresh parsley
1 tbsp fresh basil
1 salt
1 pepper

Recipe Directions for Breakfast Fritatta

  1. Chop tomatoes and onions.

  2. Chiffonade the basil.

  3. Blend the eggs with the cottage cheese, add salt and pepper to taste, and the basil.

  4. Spray a small non-stick frypan with a oil spray such as Pam. Heat on Med-high on the stove. Add the tomatoes and onions. Saute until soft, then add the parsley, continue cooking until the parsley is wilted. Remove from the pan and set aside.

  5. Spray the pan again, and add the cottage cheese and egg mixture. Turn the heat down to medium and cover. Cook until set and then gently flip. Continue cooking until lightly browned.

  6. To serve, toast the bread and butter it. Spoon out half of the eggs onto each slice of bread and top with the tomato mixture.
