Fantastic make-ahead breakfast or brunch item (save tons of calories by using egg beaters and fat free half & half & cheese)

Recipe Ingredients for Breakfast Enchiladas

10 flour tortillas
6 eggs
2 cups half and half
16 oz diced ham
1/2 cup diced onion
1/4 cup diced jalapeno
5 oz mozzarella cheese
1/2 tsp salt
1 tsp pepper

Recipe Directions for Breakfast Enchiladas

  1. Beat 6 eggs; combine with 2 cups half & half. Set aside.

  2. In each Tortilla Roll up the Following:

  3. Ham, onions, peppers and 2T cheese

  4. Place Tortilla rolls seamside down in ligtly greased 9x13 pan. Pour egg mixture over all...let sit in fridge at LEAST 8 hours. Bake at 350 covered for 20 minutes, uncovered for 15 minutes.
