Recipe Ingredients for Breakfast Enchiladas

383 g Ham Water Added Baked Cooked 96% Fat Free
300 g green bell pepper
160 g onion
8 whole wheat tortilla
1 egg
0.33 cup egg white
1/4 cup egg substitute
475 ml skim milk
1 tbsp whole wheat flour
1/4 tsp garlic powder
1 tsp tabasco
226 g reduced fat cheddar

Recipe Directions for Breakfast Enchiladas

  1. Preheat oven to 350.

  2. Mix together ham, scallions, bell pepper, onion and cheese.

  3. Put 5 tbsp of mixture on each tortilla and roll up.

  4. Place seam side down in a 12x7x2 inch pan coated with nonstick spray.

  5. In a separate bowl, beat together eggs and milk, flour, garlic, and Tabasco. Pour over enchiladas.

  6. Place in refrigerator overnight.

  7. Cover with foil and bake for 30 minutes, uncovering for the last 10 minutes.
