1/2 cup cottage cheese is only 80 cals not 102.

Recipe Ingredients for breakfast egg piccatta

12 medium eggs
1/2 cup nonfat cottage cheese
30 g asparagus
1 red bell pepper
1/4 cup onion
1 large potato
4 oz canned mushroom

Recipe Directions for breakfast egg piccatta

  1. I cut up all the vegs but the potato. put it in a oven proof pan with spray oil. Cook until tender. Take out of pan.

  2. I put the potato in the micro. cut it and lined the bottom of the pan.

  3. Added back the vegs, poured on the egg & cheese mix, put in 350 degree oven. bake for 30 mins.
