Healthy egg muffins. Very healthy way to start the day. Bake a dozen and keep in the freezer, pop in the microwave and you have breakfast on the run.

Recipe Ingredients for Breakfast Egg Muffin

0.25 large Egg, Whole
1 large Egg, White
0.75 oz Beans, Black, Mature Seeds
0.1 cup, chopped Peppers, Sweet, Green
1 tbsp chopped Onions
0.25 oz Pepper Jack
1 serving Picante Sauce

Recipe Directions for Breakfast Egg Muffin

  1. Mix two eggs and eight egg whites together.

  2. Separately cut bell pepper and onion up and put in a bowl. Add black beans, you are looking for equal parts of each. Add salsa just enough to wet the veggies and beans. Place mix in muffin cups, add a small amount of cheese. Pour egg on top and bake at 400 for 10-15 minutes.
