A lovely, low fat, low calorie, high protein breakfast. Easy to carry in to work as well.

Recipe Ingredients for Breakfast Egg casserole

6 eggs
1 yellow pepper, chopped
1 onion chopped
1 tsp olive oil
4 oz feta cheese

Recipe Directions for Breakfast Egg casserole

Scramble eggs into a bowl, add feta cheese. Put one tsp olive oil into pan and cook onions and peppers until soft. Cool slightly. Add to egg mixture, put into 8x8 pan and bak at 350 for 20-30 minutes.
