Bake on weekend and store in small containers in fridge and you have an on the go breakfast for each morning with enough left over for a morning snack.

Recipe Ingredients for Breakfast Egg Bake

12 eggs
1 T olive oil
2 cups onion
8 oz mushrooms
10 oz ham, fat free
8 oz mozzerella cheese

Recipe Directions for Breakfast Egg Bake

  1. Heat oven to 350 degrees.

  2. Drain Mushrooms and Slice onions and then saute in 1T olive oil until tender.

  3. Spray 9x11 cake pan with cooking spray and line bottom of pan with 10 slices of ham.

  4. Spread sauted vegetables over ham.

  5. Beat dozen eggs. Add salt and pepper and pour over the vegetables.

  6. Top with shredded cheese.

  7. Bake 30 minutes.

  8. Let set and cool. Divide into 6 squares and then each square into 9 individual pieces and you can eat this with your fingers on the way to work.
