Vairation on the traditional omlette and much more filling. Instead of cooking the egg in a pan or baking in a ceramic bowl, bake the eggs in a green pepper. I think its a great low carb breafast.

Recipe Ingredients for Breakfast Cups

2 eggs
1 green pepper
1 spring onion
2 oz chicken

Recipe Directions for Breakfast Cups

  1. In a bowl:

  2. 2 whole eggs

  3. One stalk of spring onion

  4. Add 2 slices of deli chicken chopped into small pieces

  5. Beat together

  6. You can add 1 or 2 oz of skim milk if you choose (For anyone on a low carb diet use 1 oz of light cream I find it works just as well)

  7. Cut one green pepper in half lenghtwise. Core and lay flat on a baking tray

  8. Pour the mixture from the bowl into the green pepper cups and bake in the oven at 325F for 25 minutes or until egg is firm.
