A healthy breakfast that can be made ahead and microwaved for busy mornings.

Recipe Ingredients for Breakfast Crustless Quiche

1/3 cup diced green pepper
1/3 cup diced yellow onion
1 package (10 oz.) frozen chopped spinach
1 tbsp. olive oil
1 cup mozzarella cheese
2 cups Eggbeaters
10 slices (6 oz.) Canadian Bacon, diced

Recipe Directions for Breakfast Crustless Quiche

Saute pepper and onion in olive oil. Microwave spinach for 2.5 minutes and drain. Combine ingredients in a mixing bowl and stir. Place contents in a glass baking pan and bake for 20 minutes at 350 or until an inserted knife comes out clean.
