Recipe Ingredients for Breakfast Cookies

1 cup rolled oats
1/2 cup whole-wheat flour
1/4 cup nonfat dry milk powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon baking soda
1/2 cup mashed banana
1/2 cup Peanut Butter
1/2 cup honey
1 teaspoon pure vanilla extract
2/3 cup dried cherries 

1/4 cup sunflower seeds

Recipe Directions for Breakfast Cookies

  1. Preheat oven to 350 degrees F. Spray a cookie sheet with nonstick spray or line with parchment paper. . In a medium-sized mixing bowl, whisk together oats, flour, milk powder, spices and baking

  2. soda, and set aside. In a large mixing bowl, stir together mashed banana, peanut butter, honey, and extract. Combine wet and dry ingredients until fully incorporated, then stir in cherries and sunflower seeds.

  3. Using a medium-sized ice cream scoop (#20), scoop dough out onto prepared baking sheet, leaving about 3 inches between mounds. Dip a small offset spatula into cold water and flatten each dough mound into a cookie about 1/2-inch thick.

  4. Bake for about 15 minutes, until cookies are golden brown. Let sit on baking sheet for 1 minute, then move to cooling racks till completely cool. Store in a sealed plastic container for up to 3 days, or freeze for 2 months.
