Recipe Ingredients for Breakfast cookies

1 cup Crisco
1 cup natural peanut butter
1/4 cup splenda
3/4 cup brown sugar
2 eggs
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1 3/4 cups quick oats, uncooked
1 1/4 cups raisins
1 granny smith apple
1/3 cup carrot
1/4 cup flaked coconut

Recipe Directions for Breakfast cookies

  1. Heat oven to 350 degrees. Set out cooling racks/foil to let cookies cool after baking.

  2. Combine 1 cup shortening, peanut butter, and sugars in bowl. Beat at medium speed until blended. Beat in eggs.

  3. Combine flour, baking soda & powder, and cinnamon. Gradually add to creamed mixture at low speed. Beat until blended. Stir in oats, raisins, apple, carrot and coconut. Drop by measuring tablespoonfuls onto greased baking sheet.

  4. Bake for 9-11 minutes or until brown around the edges. Do not overbake! Let sit on baking sheets for a minute or so and then move to racks to cool completely.

  5. Enjoy your 100 calorie cookies!
