Filled with oats, cranberries, sunflower seeds and chocolate chips - these are a lot like a breakfast bar!

Recipe Ingredients for Breakfast Cookies

3/4 c butter
1 1/2 c brown sugar
1 egg
2 tbs yogurt
1 tsp vanilla
3/4 c whole wheat flour
3 c oatmeal (large flake or old fashioned)
1/2 tsp baking soda
1 tsp allspice or cinnamon
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/2 cup chocolate chips

Recipe Directions for Breakfast Cookies

  1. Preheat oven to 350 degrees F.

  2. Cream butter and sugar. Add eggs, vanilla and yoghurt. Mix flour, baking soda, allspice and stir in to butter mixture. Add oatmeal then stir in berries, seeds and chocolate chips.

  3. Use about 1 tablespoon of dough per cookie and flatten the cookies leaving space between them because they will spread out.

  4. Bake cookies on ungreased parchment paper for about 12 minutes.
