Banana, Peanut Butter, Oatmeal breakfast cookie

Recipe Ingredients for Breakfast Cookie

1 cup rolled oats
1/2 cup whole wheat flour
1/2 cup peanut butter
1/3 cup honey
1 teaspoon vanilla
1/2 teaspoon baking soda
1 banana
1/2 cup craisins
1/2 cup dates
2 tablespoons skim milk

Recipe Directions for Breakfast Cookie

  1. Blend Peanut butter, mashed banana and honey, Add remaining ingredients and mix.

  2. Batter is thick.

  3. Grease a cookie sheet and put 6 dollops of batter on the pan. You will need to bake these in 2 batches. Yield - 12 cookies

  4. Bake at 350 for 16 - 17 minutes.

  5. Cool on a wire rack. Once cool, cookies can be put in the freezer.

  6. These are great to grab for a quick breakfast on the go.
