Recipe Ingredients for Breakfast Cookie

1/2 cup banana, mashed
1/2 cup peanut butter, chunk style with salt
1/2 cup honey
1 tsp vanilla
1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup nonfat dry milk
2 tsp cinnamon
1/4 tsp baking soda
1/2 cup raisins

Recipe Directions for Breakfast Cookie

  1. Pre-heat oven to 350F. Spray 2 cookie sheets with non-stick spray ir line with parchment paper.

  2. Mix banana, peanut butter, honey & vanilla in a large bowl.

  3. Mix oats, wheat flour, milk powder, cinnamon & baking soda in a medium bowl

  4. Stir dry ingredients into banana mixture until conbined. Stir in raisins.

  5. Using scant 1/4 cup dough, drop on prepared sheet about 3 inches apart. Use plastic or metal spatula dipped in water o flatten to 1/2 inch

  6. Bake 9-11 min or until browned. Transfer to wire rack to cool completely. Store in airtight container 3 day sor freeze up to 2 months.
