3 large eggs
1 large egg whites
2 tbsp extra virgin olive oil
2 green onions, sliced
8 leaves swiss chard, chopped
2 medium red potatoes, sliced

Recipe Directions for Breakfast chard and potato hash

  1. Heat olive oil in a flat pan.

  2. Add thinly sliced potatoes, and cook for 10 minutes.

  3. Add eggs and egg whites, chard and green onions.

  4. Spice to taste until done (about 10 more minutes).

  5. Top with hot sauce and sour cream.
