Versatile breakfast casserole that is sure to be a hit!

Recipe Ingredients for Breakfast Casserole

6 cups Egg Beaters
1 1/2 cups 1% milk
4 slices whole wheat bread
1 onion, diced
1 green pepper, diced
1 cup sliced mushrooms
16 oz mild sausage
2 cups cheddar cheese

Recipe Directions for Breakfast Casserole

  1. Preheat oven to 350 degrees.

  2. Brown sausage in large skillet. Drain and return to pan.

  3. Add mushrooms, onions, and peppers and saute about 5 minutes.

  4. Cut crusts off bread and dice into 1/2 inch cubes.

  5. Layer 1/2 of the bread on the bottom of greased casserole dish. Top with 1/2 of the sausage mixture and 1/2 of the cheese. Layer remaining bread, sausage, and cheese on top of first layer.

  6. Whisk egg beaters and milk together in a large mixing bowl and pour over layered ingredients.

  7. Bake at 350 for 45-60 minutes, until center is firm.
