Great breakfast casserole that can be made ahead the night before and then heated through before breakfast.My hubby took it to work and everyone wanted seconds, but it was all gone.

Recipe Ingredients for Breakfast Casserole

10 large eggs
1/2 small red bell pepper
1/2 small green bell pepper
1 small onion
1 1/2 cups shredded potato
1 cup shredded cheddar cheese

Recipe Directions for Breakfast Casserole

  1. Preheat the oven to 400.

  2. Spray bottom of casserole dish with non stick spray.

  3. Layer down enough shreedded potatoes to cover the bottom. I use about a cup.

  4. Spread chopped peppers and onions over potatoes.

  5. Sprinkle evenly with garllic powder and salt and pepper to taste.

  6. Sprinkle over 1/2 cup of the cheese.

  7. Scramble 10 eggs with a few tbs. water in a bowl and pour mixture over the other ingredients.

  8. Bake the casserole at 400 for about 30 minutes. Remove from oven, sprinkle over remaining potatoes and cheese and return to 350 degree oven until the cheese is melted and bubbly. This is about 15 minutes.
