Fast and Easy breakfast casserole great for any meal

Recipe Ingredients for Breakfast Casserole

4 eggs
3/4 cup egg beaters
2 cups 2% cheddar cheese
20 oz fresh shredded potatoes
3 oz real bacon bits
1 cup fat free milk

Recipe Directions for Breakfast Casserole

  1. Layer shredded potatoes in 9x13 pan sprayed with cooking spray.

  2. Mix milk, eggs, egg beaters, salt, pepper and 1 t ground mustard well pour over potatoes sprinkle with bacon pieces and cheese. Cover bake at 375 35-45 min. Cut center to check for doneness.
