To make this faster, use the frozen O'Brien potatos with bell peppers. Can also add crumbled bacon

Recipe Ingredients for Breakfast Casserole

8 eggs, scrambled
1 cup half and half
1 cup cheddar cheese
1 cup potatoes, diced, such as frozen o'brien

Recipe Directions for Breakfast Casserole

  1. Preheat oven to 350.

  2. Spray casserole dish with non-stick cooking spray. Spread potatoes in bottom of the dish evenly. (May need a little more than 1 cup.)

  3. Combine egg and half and half in a small bowl and whisk until combined. Pour over potatoes.

  4. Sprinkle cheese over top.

  5. Bake for 30-35 minutes or until toothpick inserted in the middle comes out clean.
