Make ahead and divide up to grab for breakfast at work. You can freeze it too! *Add any spices or cheese (of course, adding cheese will change the calories of the dish though!)

Recipe Ingredients for Breakfast Casserole

1 lb turkey breast, extra lean, ground, browned
1 tbsp olive oil
3 eggs
2 c egg whites
1 1/2 c skim milk
1/4 c carrots, chopped
1/4 c mushrooms, chopped
1/4 c red peppers, chopped
1/4 c broccoli, chopped

Recipe Directions for Breakfast Casserole

  1. Preheat oven to 350 degrees.

  2. Brown turkey in EVOO. Meanwhile, in a seperate mixing bowl, add remaining ingredients (eggs through broccoli)* and wisk. Once the turkey is browned, let it cool slightly, then add to egg mixture. Immediately pour into a lightly greased (I used olive oil spray) baking pan (I used a 9x13, which made the casserole thin. You could easily use a square dish, but you may have to bake it longer).

  3. Bake for 35-45 minutes or until the center is no longer "jiggley." Let it cool completely before dividing into "gran and go" freezer packs or containers. It will stay together much better. Enjoy!
