Recipe Ingredients for Breakfast Casserole

2 cups skim milk
1 cup Evaporated Milk 2% M.F. Partly Skimmed
6 eggs
1 tsp dry mustard powder
16 oz french bread
1 tbsp olive oil
1/2 onion
1 bell pepper
3 cups broccoli
8 oz sharp cheddar cheese
1 lb Veggie Ground Round Original
1/8 tsp cayenne pepper

Recipe Directions for Breakfast Casserole

  1. Mix eggs and milk. Whisk in mustard and toss in the bread cubes to soak.

  2. Brown the onion, add pepper and broccoli and cook until softened.

  3. Add veggies, cheese and veggie meat to the egg mixture and pour into a greased casserole dish. Cover and leave sit in the fridge over night (at least 2 hours).

  4. Bring to room temperature for 30 minutes before baking.

  5. Bake uncovered at 375 degrees for 50-60 minutes until top is lightly golden and center is cooked through.
