A Mexican isnpired breakfast casserole.

Recipe Ingredients for Breakfast casserole w/ Potatoes and Peppers

8 large eggs
1/2 cup egg substitute
1/2 cup light sour cream
2 cups potato, diced
2 sweet peppers
1 small onion, diced
4 oz green chilis, drained
1 tablespoon olive oil
1 1/2 cup cheddar cheese, shredded

Recipe Directions for Breakfast casserole w/ Potatoes and Peppers

  1. Brown potatoes in olive oil, transfer to a casserole dish prepared with cooking spray. Spread to cover bottom.

  2. In same pan saute the onion and sweet peppers until slightly softened, spread on top of potatoes.

  3. In a large bowl mix the eggs, egg substitute, sour cream, drained green chilis and cheese. Season with salt and pepper and top the vegetables in the prepared casserole dish.

  4. Bake for 35-45 minutes at 375.
