Easy low carb breakfast casserole that reheats beautifully throughout the week. I cut it into 5 slices and eat one for lunch each day.

Recipe Ingredients for Breakfast Casserole (Low Carb)

1 tbsp extra virgin olive oil
1/2 lb asparagus
1/2 lb mushrooms
4 slices turkey bacon
4 oz mozzarella cheese
1 3/4 cup eggbeaters

Recipe Directions for Breakfast Casserole (Low Carb)

  1. Preheat oven to 375 and spray an 8x8 square pan with non-stick spray.

  2. Saute asparagus briefly in olive oil until bright green. Using a slotted spoon and leaving the olive oil behind, move the asparagus to the prepared pan.

  3. Saute mushrooms in the remaining oil until they have released their water and it has evaporated. Layer mushrooms on top of the asparagus.

  4. Cook 4 pieces of turkey bacon and pat thoroughly with a paper towel to remove the grease. Chop into small pieces and sprinkle over the mushrooms.

  5. Cut the mozzarella into small pieces and sprinkle across the casserole.

  6. Pour Egg Beaters over the entire casserole as evenly as possible.

  7. Bake for 45-50 minutes, or until done.
