A lower calorie version of my breakfast casserole.

Recipe Ingredients for Breakfast casserole (low cal version)

288 g Pillsbury Crescent rolls
3/4 c milk
1/4 tsp salt
1/8 tsp black pepper
1/2 c red pepper
1/2 c sliced portabello mushrooms
2 c shredded mozzarella
6 eggs

Recipe Directions for Breakfast casserole (low cal version)

  1. Slice veggies. In a medium skillet, cook until tender.

  2. Line the bottom of a buttered 13x9x2 dish with crescent rolls, firmly pressing the perforations to seal

  3. Sprinkle with veggies and cheese

  4. Combine remaining ingredients, beat well, and pour over veggies and cheese.

  5. Cook at 425 degrees for 15 minutes, until bubbly and the crust begins to brown.

  6. After cooking, let stand for 5 minutes and serve immediately

  7. (can be frozen)
