Make a day ahead and pop in the oven! Lighten this up by using egg substitute, and FF cheese.

Recipe Ingredients for Breakfast Casserole with Hash Brown Potatoes

1 lb. pork sausage
10 oz hash brown potatoes
6 large eggs
1 c. cheddar cheese, shredded
1 tsp. dry mustard
6 slices light bread
2 c. 1% milk
2 T. canola oil

Recipe Directions for Breakfast Casserole with Hash Brown Potatoes

  1. Brown sausage and drain.

  2. Cook hash browns in oil until golden -- not crispy.

  3. Toast both sides of bread and then slice into small cubes.

  4. Mix eggs with milk and mustard. Add sausage, cheese and bread and mix well until bread is wet.

  5. Spread hash browns on bottom of small casserole dish. Pour egg mixture on top and spread over hash browns.

  6. Cover and place in fridge up to 24 hours.

  7. Bake at 350 for 45 minutes to 1 hour. Let stand 15 minutes after removing from oven.
