Makes four servings. Freeze in four 1 cup pyrex bowls.

Recipe Ingredients for Breakfast Cassarole

1/4 cup diced onion
1/2 cup diced green pepper
1/2 cup spinach
1/4 cup zucchini
1/2 cup mushrooms
2 1/4 cups egg beaters
1/4 cup grated parmessan cheese
1 Salt and pepper to taste

Recipe Directions for Breakfast Cassarole

Fry all vegetables using non-stick spray. Once tender, add egg beaters and cook until almost done. Last minute and parmessan cheese and finish cooking. Add salt and pepper to taste if needed.
