Makes 15 servings



Enough filling to fill 3 calzoni. I don't do all the same filling when I make Calzoni for a Crowd, so this is only enough for part of the recipe.

Recipe Ingredients for Breakfast Calzoni filling

8 eggs
2 tbsp water
2 tbsp garlic, minced
2 tsp olive oil, butter or bacon grease
6 bacon (42 g), slices, thin-cut reduced sodium, crumbled
1 c cheddar cheese (or Monterrey Jack, or other firm cheese)
3 tbsp parmesan cheese (or other hard cheese)
1/4 tsp black pepper

Recipe Directions for Breakfast Calzoni filling

  1. Beat eggs with water in bowl.

  2. In nonstick pan, saute' garlic in oil until fragrant and lightly browned. Add beaten eggs and scramble. Remove from heat when they are not quite done and still quite moist but not runny. set aside to cool.

  3. Prepare Calzoni Dough recipe (elsewhere, because it messes it up when I enter it together). Roll 1/16th of the dough into an oblong 1/4" thick. Place 1/3 of the cheeses down center. Top with 1/3 of the scrambled eggs and 2 slices crumbled bacon. Sprinkle with pepper.

  4. Gently pull the long edges outward to make them 1/8" thick. Fold them over filling. Pinch seam and edges to seal.

  5. Follow Calzoni Dough for a Crowd recipe for the rest.
